This rich and silky chocolate tofu mousse is made with silken tofu, dark chocolate, tahini and a touch of maple syrup. It is naturally vegan, gluten free and refined sugar free, incredibly easy to prepare and perfect as a make ahead dessert.
Melt the dark chocolate using a bain marie until completely smooth.
Alternatively, melt it in the microwave at low power, stirring regularly to prevent it from burning.
Add the silken tofu, melted chocolate, tahini, maple syrup. Blend until completely smooth, creamy and glossy, with no lumps remaining.
Transfer the mousse to a container or directly into serving bowls. Refrigerate for at least 2 hours, or until fully set.
For the best texture, prepare the mousse the evening before and leave it in the fridge overnight.
