Honeydew Cucumber Salad with Mint and Lime

This fresh vegan honeydew cucumber salad combines thinly sliced melon marinated with lime, mint, maple syrup, and salt, then layered with crisp cucumber, radishes, vegan feta, and pecans. A light yet satisfying summer salad with a delicate balance of sweetness, acidity, freshness, and savory flavor.

Ingredients

  • 2 cups Thinly sliced honeydew melon
  • 1 cup Sliced cucumber
  • 4 Radishes, thinly sliced
  • cup Vegan Feta
  • ¼ cup Pecans

For the Marinade

  • 1 Lime
  • 1 tsp Maple Syrup
  • 10–12 leaves Fresh Mint
  • tsp Salt

For the Decoration

  • 1 tbsp Chopped fresh dill Optional

Instructions

  • Remove the seeds from the melon, then slice the flesh thinly. Place the slices in a colander and allow them to drain for 5–10 minutes, so that any excess moisture does not dilute the marinade.
  • Transfer the honeydew to a bowl. Add the lime juice, maple syrup, salt, and fresh mint. Using clean hands, gently massage the melon for 1–2 minutes, making sure each slice is evenly coated without breaking it.
  • Cover the bowl and refrigerate for 30 minutes. During this time, the melon will absorb the lime and mint while releasing some of its juices, creating a light natural dressing.
  • While the honeydew is marinating, slice the cucumber and radishes. Prepare the vegan feta, pecans, and fresh dill, if using.
  • Arrange the marinated honeydew over the bottom of a serving plate, creating a soft base for the salad. Layer the cucumber, radishes, vegan feta, and pecans over the melon.
  • Drizzle with the extra virgin olive oil and finish with fresh mint leaves and optional dill. Taste before adding more salt, as the marinade and vegan feta should already provide enough seasoning. Serve immediately.

Notes

Storage Note. This salad is best enjoyed immediately after assembling, while the cucumber and radishes are still crisp. Leftovers can be stored in an airtight container in the refrigerator for up to 1 day, although the ingredients will gradually release more liquid and soften. Freezing is not recommended.
