Sauteed Eggplant with Garlic and Herbs

This sautéed eggplant is soft, flavorful, and easy to make with olive oil, garlic, parsley, salt, and black pepper. A simple vegan side dish that works beautifully with pasta, plant-based mains, hummus, or as part of a Mediterranean-style meal.

  • 2 Eggplants
  • 2 tbsp Olive Oil
  • 1 clove Garlic
  • ½ tsp Salt
  • ¼ tsp Black Pepper
  • 2 tbsp Fresh Parsely

Instructions

  • Wash the eggplants, trim the ends, and cut them into medium cubes.
  • Add the olive oil and garlic cloves to a large skillet or frying pan. Warm over medium heat for 1–2 minutes, until the garlic becomes fragrant.
  • Add the eggplant cubes to the pan, then season with salt and black pepper. Stir well so the eggplant is lightly coated with the oil.
  • Cook for 10–15 minutes, stirring often, until the eggplant becomes soft, golden, and tender.
  • Turn off the heat and add the fresh chopped parsley. Stir gently to combine.
  • Serve warm as a side dish, with pasta, plant-based mains, hummus, or as part of a Mediterranean-style meal.

Storage Note:
