The Creamiest Tofu Chocolate Pudding

A rich and creamy tofu chocolate pudding made with silken tofu, dark chocolate and just a few simple ingredients. Vegan, gluten free and naturally sweetened, it takes only a few minutes to prepare and is best enjoyed freshly blended for the softest, silkiest texture.

Instructions

  • Melt the dark chocolate gently using a bain marie or microwave it in short intervals. Allow it to cool slightly. It should remain fluid but should not be very hot.
  • Add the silken tofu, melted chocolate, tahini, maple syrup if using, and salt to a blender.
  • Blend until completely smooth, creamy and glossy. Scrape down the sides of the blender if necessary.
  • Add the soy milk gradually, starting with 30 g. Blend again and add a little more milk only if needed to reach a soft, silky and spoonable pudding consistency.
  • Divide between four small bowls or glasses and serve immediately, either on its own or with your favorite toppings.

Notes

Storage: Leftovers can be kept in an airtight container in the refrigerator for up to 2 days. As the pudding chills, the chocolate will set and the texture will become noticeably firmer and more mousse like.
Best served fresh: This tofu chocolate pudding is best enjoyed shortly after blending, while the texture is still soft, silky and creamy. If you prefer a classic spoonable pudding consistency, I recommend serving it fresh rather than chilling it for several hours.
