A silky, pourable vegan crème anglaise made without eggs or dairy. This easy plant-based custard sauce is naturally gluten-free and refined sugar-free, and can be flavored with vanilla, citrus, spices, chocolate, and more.
Pour the cold soy milk into a small saucepan. Add the cornstarch and whisk thoroughly until completely dissolved and no lumps remain.
Add the soy cream, maple syrup, vanilla, orange zest, if using, and a small pinch of salt. Whisk to combine.
Place over low-medium heat and cook, whisking continuously, until the sauce begins to thicken.
As soon as the crème anglaise lightly coats the back of a spoon while remaining fluid and pourable, remove it from the heat. Do not let it become as thick as pastry cream.
Remove the orange zest and serve warm or at room temperature.

Storage Note
Store in an airtight container in the refrigerator for up to 3–4 days. The sauce will thicken as it cools; simply whisk in a little soy milk before serving to bring it back to a pourable consistency.
