Vegan Waldorf Salad Recipe – Classic, Creamy & Easy

This Vegan Waldorf Salad stays beautifully close to the classic, combining crisp green apples, celery, juicy red grapes, lettuce, and creamy vegan mayonnaise. Fresh, crunchy, rich, and incredibly simple, it works as a side dish, light lunch, or elegant starter.

Ingredients

  • 2 Green Apples Medium size
  • 2 Celery Stalks About 90 - 100 gr
  • ¾ cup Seedless red or purple grapes
  • cup Vegan Mayonnaise
  • 1 tbsp Fresh Lemon Juice
  • 24 leaves Lettuce Small Lettuce is better
  • ½ cup Walnuts Optional
  • To Taste Fine Sea Salt
  • To Taste Black Pepper
  • To Taste Extra virgin olive oil Optional

Instructions

  • If you do not already have it ready, prepare the vegan mayonnaise following your preferred recipe or my vegan mayonnaise one.
  • Wash and dry the lettuce thoroughly. Keep the leaves whole, preferably using the smaller, crisp leaves closer to the heart.
  • Slice the celery into small pieces on a slight diagonal. Quarter the apples, cut them into thin slices about 3 mm thick, then cut the slices into thin matchsticks.

  • Transfer the apple and celery to a large bowl and toss immediately with the lemon juice.
  • Cut the grapes in half lengthwise and set them aside.
  • Add the vegan mayonnaise to the apple and celery and mix gently with two spoons until everything is generously and evenly coated.
  • Arrange the whole lettuce leaves on a serving plate to create a fresh bed for the salad. Spoon the creamy apple and celery mixture over the center.
  • Scatter the halved grapes over the top. If using walnuts, roughly chop them and add them now.
  • Finish with salt and freshly ground black pepper. Add a small drizzle of extra virgin olive oil if desired and serve immediately.

Store the Vegan Waldorf Salad in an airtight container in the refrigerator for up to 2 days. For the best texture, it is ideally enjoyed fresh, as the apples and celery will gradually soften once mixed with the dressing. If preparing it ahead, keep the walnuts, the grapes and lettuce separate and add them just before serving.
