These might just be the best vegan macadamia cookies you’ll ever make. And yes, they’re also gluten-free and refined sugar-free. A bold statement, perhaps, but I’ve spent an entire year trying to perfect this recipe. I’m sure there’s still room for improvement, but we’re getting pretty close. And the macadamia nuts? They take these cookies to a whole new level.

Why You’ll Love These Macadamia Chocolate Chip Cookies

You’ll love these macadamia cookies because they’re sweet without any refined sugar, soft on the inside and crispy around the edges, even though they’re completely gluten-free (and therefore suitable for people with coeliac disease, provided all ingredients are certified gluten-free). They’re also wonderfully buttery, despite being 100% plant-based.

I’ve even shared them with people who aren’t vegan and are used to traditional cookies, and guess what? They couldn’t tell the difference. You’ll also love them because they’re made with wholesome ingredients, offering a delicious alternative to conventional cookies or gluten free cookies made with ready-made mix.

And last, but certainly not least, you’ll love them because the cookie dough is the perfect base for endless variations. Macadamia nuts are the stars of this recipe, but you can easily make it your own. Try different nuts, dates, sesame seeds, or whatever inspires you. Get creative!

Ingredients You’ll Need

The secret to a good cookie is finding the perfect balance between sweetness, texture, and flavour. And when you’re baking without gluten, every ingredient has a role to play. For these vegan macadamia chocolate chip cookies, we’re using a combination of naturally gluten-free flours, a few simple pantry staples, dark chocolate, and, of course, the star of the recipe: macadamia nuts.

Macadamia Nuts: The Stars of These Cookies

Macadamia nuts are what make these cookies truly special. With their delicate, buttery flavour and satisfying crunch, they pair beautifully with dark chocolate and add richness to every bite.

I personally love buying macadamia nuts whole, still in their shells, because I enjoy cracking them open (have you ever noticed the incredible colours inside the shells?). But you can also buy them whole and shelled, or already chopped.

The Cookie Dough

The dough is the foundation of this recipe, and getting the right combination of ingredients is what gives these cookies their soft centres and crispy edges.

  • Rice flour: Provides structure and a delicate texture without gluten. I recommend using finely milled rice flour for the best results.
  • Almond flour: Adds moisture, richness, and a subtle nutty flavour that makes these cookies particularly delicious.
  • Tapioca starch: Helps bind the ingredients together and contributes to that slightly chewy texture we love in chocolate chip cookies.
  • Cornstarch: Keeps the texture tender and helps balance the other flours.
  • Vegan butter: Gives the cookies their buttery flavour and helps create those deliciously crisp edges.
  • Coconut sugar: Adds sweetness with subtle caramel notes, while keeping the recipe free from refined sugar.
  • Soy milk: Brings the dough together and adds just enough moisture. You can use another unsweetened plant-based milk if you prefer.
  • Vanilla extract: A little vanilla enhances the flavour of the chocolate and nuts.
  • Baking soda: Helps the cookies spread and develop their characteristic texture.
  • Salt: Just a pinch balances the sweetness and brings out all the flavours. Skip it if your vegan butter is already salted.

Dark Chocolate

You can use any dark chocolate you like, as long as it contains no refined sugar. I personally use dark chocolate chips, but you can also use a chocolate bar and roughly chop it into chunks.

Equipment You’ll Need

You don’t need any fancy kitchen equipment to make these macadamia chocolate chip cookies. A mixing bowl, a whisk or spatula, a baking tray, and some parchment paper are pretty much all you need. Chances are, you already have everything in your kitchen.

However, there’s one kitchen tool I consider particularly important when baking cookies: a cooling rack. When I first started baking cookies, I didn’t have one, and I genuinely thought it wouldn’t make much difference. After all, couldn’t I just leave my cookies to cool on the baking tray? Well, I eventually realised that investing a little in a good cooling rack is absolutely worth it.

Here’s why: when cookies come out of the oven, they’re still releasing heat and moisture. If you leave them sitting on a flat surface for too long, steam can become trapped underneath, making the bottoms softer and sometimes slightly soggy. A wire cooling rack allows air to circulate around the cookies, helping moisture escape from both the top and bottom. This is particularly useful when you want cookies with crispy edges and a lovely texture.

Just remember to let your cookies rest on the baking tray for a few minutes first, especially if they’re gluten-free, as they can be quite delicate while still hot.

This is the cooling rack I purchased, and I can honestly say it offers pretty good value for money. You don’t need to spend a fortune on one, but it’s a small investment that can make a real difference to your home baking.

How to Make Vegan Macadamia Chocolate Chip Cookies

Making these vegan macadamia chocolate chip cookies is surprisingly easy, and you won’t need a stand mixer or any special baking skills. The secret is in the consistency of the dough, a little patience while it chills, and knowing when to take the cookies out of the oven.

Step 1: Cream the Vegan Butter and Coconut Sugar

In a large mixing bowl, combine the softened vegan butter and coconut sugar. Using a whisk or spatula, mix until the ingredients are well combined and the mixture looks creamy.

Add the vanilla extract and soy milk, then mix again until incorporated. Don’t worry if the mixture looks slightly grainy: coconut sugar doesn’t dissolve as easily as refined white sugar.

Step 2: Add the Gluten-Free Flours

Add the rice flour, almond flour, tapioca starch, cornstarch, baking soda, and a pinch of salt (if using unsalted butter). Mix gently with a spatula until a soft, slightly sticky cookie dough forms. Make sure there are no pockets of dry flour, but avoid overmixing.

The dough should be soft enough to shape into balls once chilled, but not runny. If it feels particularly dry, add a little more plant-based milk, one teaspoon at a time.

Step 3: Fold in the Chocolate and Macadamia Nuts

Roughly chop your macadamia nuts if you’re using whole ones, keeping some larger pieces for extra crunch. Add the macadamias and dark chocolate chips to the dough, folding them in gently until evenly distributed.

You can reserve a few chocolate chips and macadamia pieces to press onto the cookies just before baking. It’s a little trick that makes them look especially beautiful!

Step 4: Shape the Cookies

Divide the dough into evenly sized portions. Roll each portion into a ball and arrange them on the prepared baking tray, leaving enough space between them.

Gently flatten each ball with your fingers or the palm of your hand if needed. Since these cookies are gluten-free, giving them a little help to spread will encourage a more traditional cookie shape. If you saved some chocolate chips or macadamia pieces, now is the time to press them gently onto the surface.

Step 5: Bake Until Lightly Golden

Bake for approximately 10–12 minutes, or until the edges look set and lightly golden. The centres may still appear slightly soft, and that’s exactly what we want. Cookies continue to firm up as they cool, so resist the temptation to leave them in the oven until they’re completely hard.

Keep an eye on them during the final minutes, as baking times can vary depending on your oven and the size of your cookies.

Step 6: Cool on a Wire Rack

Remove the baking tray from the oven and let the cookies rest for about 5–10 minutes. Freshly baked gluten-free cookies can be particularly delicate, so give them a moment to firm up before moving them. Then, carefully transfer them to your wire cooling rack and allow them to cool completely.

Air will circulate underneath the cookies, allowing excess moisture to escape and helping preserve their lovely texture.

And there you have it! Homemade vegan macadamia chocolate chip cookies, ready to enjoy with a cup of coffee, tea, or your favourite plant-based milk.

How to Store Macadamia Chocolate Chip Cookies

Once completely cooled, store your macadamia chocolate chip cookies in an airtight container at room temperature for approximately 3–4 days, preferably in a cool, dry place.

Personally, I like to keep mine in the refrigerator. I find that the cooler temperature helps them maintain a firmer texture, especially in warmer weather. Just make sure they’re completely cool before storing them, and use a well-sealed container to protect them from moisture.

Refrigeration is optional, though, and cookies stored at room temperature may retain a more delicate, crumbly texture. You can also freeze the baked cookies in a freezer-safe container for up to 2–3 months. Allow them to thaw before serving.

A little tip: If your cookies lose some of their crispness, warm them in the oven at 150°C (300°F) for a few minutes, then let them cool on a wire rack. This can help bring back some of that freshly baked texture.

Notes

Substitutions & Variations

  • Macadamia nuts: Replace them with walnuts, pecans, hazelnuts, or almonds. You can also experiment with chopped dates or seeds for a different flavour and texture.
  • Rice flour: You can try finely milled brown rice flour for a slightly nuttier flavour. Avoid replacing it entirely with almond flour, as this will change the texture.
  • Almond flour: Hazelnut flour is a lovely alternative, especially with dark chocolate.
  • Tapioca starch: You can replace it with potato starch, although the cookies may be slightly less chewy.
  • Cornstarch: Potato starch works as an alternative, but may produce a slightly different texture.
  • Vegan butter: Choose a firm, block-style vegan butter for the best results. Soft spreads may cause the cookies to spread too much.
  • Coconut sugar: You can replace it with light brown sugar in a similar quantity, although the cookies will no longer be refined sugar-free.
  • Soy milk: Unsweetened almond milk or certified gluten-free oat milk work as alternatives.
  • Dark chocolate: Use chocolate chips or a chopped chocolate bar. You can also try vegan white chocolate for a classic white chocolate macadamia cookie variation. Choose chocolate without refined sugar if you want to maintain that characteristic.
