This is a simple soup, but one that works incredibly well. The sweetness of the carrots, the acidity of the lemon, and the creaminess of the cauliflower feel as though they were made to go together.
It is also incredibly easy to prepare and, let’s be honest, perfect for using up that cauliflower that has been staring at you from the fridge for the past few days.
Why Lemon, Carrot and Cauliflower Work So Well Together
A good recipe is often simply a question of balance. You build flavor by bringing together ingredients that do different things, but somehow complete each other.
That is exactly what happens in this soup. Carrots bring sweetness and a slightly earthy flavor, while cauliflower adds body, a subtle umami note, softness, and a naturally creamy texture once blended. Lemon comes in at the end with acidity and brightness, cutting through the sweetness and making the whole soup feel lighter and more alive.
None of these ingredients needs to dominate. The carrots give warmth, the cauliflower creates the base, and the lemon lifts everything. It is a very simple combination, but it works because each element has a clear role.
Ingredients You Need

The ingredient list for this lemon carrot cauliflower soup is deliberately simple. Each ingredient contributes something different to the final flavor and texture.
Cauliflower. This creates the main base of the soup. Once cooked and blended, it becomes incredibly smooth and gives the soup body, together with a mild savory flavor.
Carrots. They bring natural sweetness, color, and a slightly earthy flavor that balances the cauliflower beautifully.
Potato. A small amount of potato makes the soup thicker, silkier, and more satisfying without needing any cream. It also helps bring all the vegetables together once blended. It is optional, because the cauliflower alone is enough to make this soup incredibly creamy.
Onion. This is where the flavor starts. Cooking the onion first creates a sweeter and more aromatic base for the vegetables and gives the soup more depth.
Lemon. One of the most important ingredients here. Lemon juice adds acidity and freshness, cutting through the sweetness of the carrots and making the soup taste brighter and more balanced.
Olive oil. It adds richness and helps round out the vegetables and lemon.
Vegetable broth. This gives the soup more depth than water alone while keeping the vegetables at the center of the recipe.
Salt and black pepper. Simple seasoning is really all this combination needs. Salt brings the different flavors forward, while black pepper adds a little warmth.
How to Make Lemon Carrot Cauliflower Soup
STEP 1. Cook the Onion
Finely chop the onion and cook it slowly in a little olive oil until soft and translucent.
STEP 2. Prepare the Vegetables
Peel and chop the potato and carrots, then separate the cauliflower into florets.


STEP 3. Add Everything to the Pot
Add the potato, carrots, and cauliflower to the cooked onion. Season with salt and black pepper and cook for a few minutes, stirring occasionally, so the vegetables can start developing more flavor.
STEP 4. Add the Broth
Pour in just enough vegetable broth to cover the vegetables. If you do not have vegetable broth ready, you can use hot water with a small spoonful of miso paste for extra depth.
STEP 5. Cook Until Tender & Add The Lemon
Cook gently for about 40 minutes, or until all the vegetables are completely soft. Towards the end of the cooking time, add the lemon juice and a little freshly grated lemon zest. Adding them at this stage helps keep the flavor fresh and bright.
STEP 6. Adjust the Texture Before Blending
Before blending, remove one or two ladles of the cooking liquid and keep them aside. This is one of my favorite tricks for blended soups. It is much easier to add liquid back in than to fix a soup that has become too thin. Blend until completely smooth, then add some of the reserved liquid if you want a looser consistency.
STEP 7. Finish and Serve
I finished mine with a drizzle of olive oil, almonds lightly toasted in a pan, and fresh thyme.
You can also serve the soup exactly as it is or get creative with the toppings. Crispy chickpeas work especially well if you want to add texture and a little more protein. You can use my air fryer chickpea recipe for those.

How to Get the Perfect Creamy Texture
The easiest way to control the texture of a blended soup is to control the liquid before you blend it. Before using the blender, remove one or two ladles of the cooking liquid and keep them aside. Blend the soup first, then add the reserved liquid little by little until you reach the consistency you want. It is a very simple trick, but it gives you much more control than trying to fix a soup that has already become too thin.
Traditional creamy soups often rely on cream, butter, or flour to create richness and body. This lemon carrot cauliflower soup does not need any of them. It is naturally plant based and gluten free, and cauliflower already becomes beautifully creamy once cooked and blended.
The potato helps even more. Its starch gives the soup extra body and creates a smoother, silkier consistency without changing the flavor too much.
If you want an even more refined texture, you can also pass the blended soup through a fine sieve before serving. I did not do that for this recipe because I wanted to keep a little texture rather than making it completely silky smooth.
What to Serve with Lemon Carrot Cauliflower Soup
Serve It as a Starter or Side
If you are serving a smaller portion, this soup works beautifully as a starter or side dish. Since it is mainly made with vegetables and potato, you can pair it with a more protein rich main course, such as vegan schnitzel, baked tofu, tempeh, or another plant based protein. This is a great way to make the soup part of a more complete meal without making it feel too heavy.
Turn It Into a Main Course
If you want to serve the soup as your main dish, simply make the portion more generous. You already have vegetables from the cauliflower and carrots, together with carbohydrates from the potato. To make the meal more complete, add a source of plant based protein.
A spoonful of plain vegan yogurt works very well on top, especially if you like a creamy contrast. You can also add roasted chickpeas, other crispy legumes, or cubes of tofu. These toppings do not just add protein. They also bring texture, which works especially well with a smooth blended soup.


Lemon Carrot Cauliflower Soup: Creamy, Bright and Easy

- 650 gr Cauliflower
- 250 gr Carrots
- 150 gr Potatoes
- 1 Medium Onion, Finely Chopped
- 750 ml Vegetable Broth Add more if needed
- 1 Organic lemon If it is not organic don't use the zest
- 2 tbsp extra virgin olive oil
- To Taste Black Pepper
- To Taste Sea Salt
Instructions
- Finely chop the onion. Heat the olive oil in a large pot over medium low heat and cook the onion gently until soft and translucent.
- Peel and chop the carrots and potato and separate the cauliflower into florets.
- Add the carrots, potato, and cauliflower to the pot. Season with salt and black pepper and cook for 3 to 5 minutes, stirring occasionally.
- Pour in approximately 750 ml of vegetable broth, or just enough to cover the vegetables. Bring to a gentle simmer.
- Cover partially and cook over low heat for around 35 to 40 minutes, or until all the vegetables are very tender.
- During the final few minutes of cooking, add the lemon juice and a little freshly grated lemon zest. Taste and adjust the amount of lemon depending on how bright you want the soup to be.
- Before blending, remove one or two ladles of cooking liquid and keep them aside. Blend the soup until creamy. Gradually add some of the reserved liquid back in until you reach your preferred consistency.
- Taste and adjust the salt, black pepper, and lemon if necessary.
- Serve warm with extra virgin olive oil, toasted almonds, and fresh thyme, or add your favorite toppings.
