Vegan scrambled eggs are often disappointing. Too dry, too bland, or lacking that soft and creamy texture that makes traditional scrambled eggs so satisfying. Recreating that balance without eggs is not just about replacing an ingredient, it’s about understanding texture, flavor, and structure.
This recipe is designed to do exactly that. A plant-based alternative that is soft, creamy, and naturally high in protein, built on ingredients that work together to create a result that feels both satisfying and complete.
Below, you’ll find the full recipe with precise measurements and simplified steps. In the sections that follow, we’ll focus on how to achieve the right consistency, how to build flavor, and how to adjust the texture depending on your preference.
How to Make Vegan Scrambled Eggs
You’ll find the full recipe with precise measurements and simplified steps in the recipe card below. Here, we focus on the method and the key elements that make the difference in texture and flavor. At its core, vegan scrambled eggs are about recreating a soft, slightly creamy consistency while building a savory flavor that feels complete.
In this recipe, we use tofu as the base to create a structure that is both soft and satisfying, and it naturally provides a good amount of protein. You can choose to use homemade tofu ( which is always the best option, both in terms of quality and cost) or a store-bought version if you prefer a quicker approach. In both cases, as long as you follow the recipe step by step, the result will be just as satisfying and incredibly similar to the traditional scrambled eggs recipe!
If you want to understand more deeply why tofu works so well in this kind of preparation, you can read my complete guide to vegan egg substitutes, where I explain the different functions of eggs in cooking and baking, and how to replace them properly. The secret of this recipe lies in the cream we prepare. It’s what brings everything together: coating the tofu, recreating the same soft texture, the familiar color, and a flavor that comes surprisingly close to real eggs.

What Makes Vegan Scrambled Eggs Taste Like Eggs
Before moving on to the steps, it’s important to understand the role of the main ingredients for this super vegan scrambled egg. This is what allows you to recreate not just the look, but the texture and flavor.
Tofu
Tofu is an incredibly versatile ingredient. Its neutral flavor allows it to absorb and carry other ingredients, making it perfect for building taste intentionally. Its texture also varies depending on the type, in this recipe, we use a medium-firm block, which provides the right balance between structure and softness. Once crumbled and cooked with the cream, tofu takes on a soft, slightly creamy consistency that closely resembles scrambled eggs. In many ways, tofu acts as a base that can be shaped, both in flavor and texture.
Kala Namak (Black Salt)
This is the key ingredient that transforms the recipe. Kala namak, often called black salt, is a sulfur-rich mineral salt traditionally used in Indian cuisine. Its distinctive aroma comes from naturally occurring sulfur compounds, which are the same compounds found in eggs. Used in small amounts, it recreates that familiar “eggy” flavor almost instantly.
Turmeric
Appearance plays a much bigger role than we often think. Studies in sensory science show that the way food looks influences both our desire to eat it and how we perceive its flavor. A pale, white scramble wouldn’t evoke the same experience. Turmeric gives the tofu that warm yellow color we associate with eggs, making the dish more visually appealing. When paired with black pepper, its beneficial compounds are also more easily absorbed.
The Cream
This is what brings everything together. To bind the tofu, enhance the flavor, and create a more cohesive texture, we prepare a simple cream based on tahini and spices. Tahini adds natural richness and helps create a smoother, more velvety consistency, while the spices build depth and a subtle umami profile. This combination transforms the tofu from a simple ingredient into something much more complete.
Vegan Scrambled Eggs Step-by-Step Recipe
This is a quick and simple recipe that, once you learn it, can become a base you can easily adapt and build on. Tofu scramble can be enjoyed as it is, or flavoured and combined with other ingredients to create more complex and satisfying dishes.

Step 1: Press and crumble the tofu
Start by pressing the tofu to remove excess water. You can use a tofu press, or simply place a weight on top ( like a heavy book) and let it sit for a few minutes. If you don’t have a tofu press, no problem: I’ve written a complete guide on how to press tofu without a tofu press. Thank me later.
This step is important, as it allows the tofu to absorb flavors more effectively later on. Once pressed, crumble it with your hands. It shouldn’t become too fine, aim for irregular pieces to better mimic the texture of scrambled eggs.

Step 2: Prepare the cream
In a bowl, combine soy milk, tahini, turmeric, smoked paprika, sweet paprika, garlic powder, nutritional yeast, and salt. Whisk everything together until you get a smooth, liquid cream. If you don’t have a whisk, a fork will work just as well.

Step 3: Cook the tofu
Heat a drizzle of oil in a pan over medium-high heat, then add the crumbled tofu. Cook it for a few minutes, stirring occasionally, until it starts to turn lightly golden. This is where the Maillard reaction develops, adding depth and flavor. Once the tofu is slightly browned, reduce the heat.
Step 4: Add the cream and finish
Pour the cream into the pan and add a small amount of kala namak. Stir gently and cook for a couple of minutes, allowing the sauce to coat the tofu and thicken slightly. At this stage, you can control the final texture. For a softer, creamier scramble, cook for a shorter time and serve while still moist. For a drier, more set texture, continue cooking for another 2–3 minutes until you reach your desired consistency.

Vegan Scrambled Eggs Substitutions
This recipe is designed to be balanced and reliable, but it can be adapted depending on what you have available. Here are the most useful substitutions and how they may affect the final result. If you don’t find the exact substitution you’re looking for, feel free to leave a comment, we’ll be happy to guide you where possible.
If you don’t have tofu
Tofu is the base of this recipe and what gives structure and protein. You can replace it with chickpea-based alternatives (such as chickpea flour scramble), but the texture and flavor will be quite different.
If you don’t have soy milk
You can use other unsweetened plant-based milks such as oat or almond milk. Soy milk works best because of its protein content, but other options will still give a good result.
If you don’t have tahini
You can replace it with another nut or seed butter (like almond butter or sunflower seed butter). This helps maintain the creamy texture and richness.
If you don’t have nutritional yeast
You can skip it, but keep in mind that it adds a slightly cheesy, savory depth. Without it, the flavor will be milder.
If you don’t have all the spices
You can simplify the spice mix. Turmeric is the most important for color, while paprika and garlic powder add depth. Even with fewer spices, the recipe will still work.

Notes
Store the vegan scrambled eggs in an airtight container in the refrigerator for up to 2 days. Reheat gently in a pan over low heat, adding a splash of soy milk or water if needed to bring back the creamy texture. Freezing is not recommended, as the tofu may become watery and grainy once thawed. Nutrition Note:
